Laapsi is a delicious Gujarati sweet made with broken wheat or daliya. Here is an amazing recipe that you can try.

Ingredients

1 Cup Jada Lapsi (Broken Wheat)

2 Tablespoons Ghee

3 Cups of Milk

1 Cup Granulated Sugar

Half Tablespoon Green Cardamom Powder

Pinch of Salt

8-10 Blanched Almonds And Pistachios For Garnish

How To Make?

Step 1: Heat ghee in a deep non-stick pan.

Step 2: Add the broken wheat and saute for five to six minutes.

Step 3: Add milk to the pan and stir well. Cover it and cook for about 15 minutes.

Step 4: Add sugar, cardamom and salt. Stir until the mixture becomes thick.

Step 5: Add some of the almonds and pistachios and stir again.

Step 6: Take it off the heat and add the rest of the almonds and pistachios for garnish.

Kheer is an iconic dish that is relished by people all over the country. Said to be one of the most auspicious dishes, kheer is made in most Indian households during every festival and even on special days. Here is a simple recipe for you to follow!

Ingredients

¼ Cup Basmati Rice

1 Litre Whole Milk

Sugar as per taste

Half Teaspoon Green Cardamom Powder

1 Pinch of Saffron Strands

1 Tablespoon Of Chopped Almonds

1 Tablespoon Sliced Cashew

1 Tablespoon Sliced Pistachios

1 Tablespoon Raisins

2 Tablespoons of Kewra Water

How To Make?

Step 1: Soak rice in water for 30 minutes.

Step 2: While the rice is soaking, boil the milk in a pan.

Step 3: Scoop out a few spoons of milk in a separate bowl and add saffron to it. Set it aside.

Step 4: Add the soaked rice to the boiling milk and mix well.

Step 5: Cook rice on low heat until they are halfway cooked.

Step 6: Add sugar to the pot and stir well. Let it cook for a while.

Step 7: Add cardamom powder, sliced almonds, and chopped cashews. Then add the saffron milk.

Step 8: Add Kewra water and cook until kheer thickens.

Step 9: Turn off the heat once done. You can serve it hot or cold. Refrigerate it if you want to serve it cold.

3. Boondi Laddu

Another much-loved sweet dish, Boondi Laddu is widely made during Dhanteras. Diwali festivities are incomplete without some lovely boondi laddus. And this extremely easy-to-make recipe will add a dash of luck to your celebrations. 

Ingredients

500 Grams Chickpea Flour

Oil as per requirement

Water as per requirement

500 Grams Sugar

2 Teaspoons Ghee

2 Teaspoons Cardamom Powder

How To Make?

Step 1: Mix Chickpea flour with water till the consistency is thick.

Step 2: Deep fry droplets of this batter in hot oil to make boondi.

Step 3: Make sugar syrup and soak the boondi in it.

Step 4: Take the boondi out of the mixture and add cardamom powder to it.

Step 5: Apply ghee on your palms and make small balls.

Your boondi laddu is ready to eat. 

4. Kaju Katli

Ingredients

2 Cups Cashew Nuts

Half Cup Water

¾ Cup Sugar

Half Teaspoon Cardamom Powder

1 Teaspoon Rosewater

1 Teaspoon Ghee

Saffron Strands

Edible Silver Foil

Rose petals

Butter Paper

Method

Step 1: In a mixer, grind the chilled cashews to a smooth powder.

Step 2: Sieve the ground cashew powder.

Step 3: In a non-stick pan, add sugar, water and cardamom powder.

Step 4: Keep the flame on low and keep stirring until the consistency is stringy.

Step 5: Add the sifted cashew powder to the sugar syrup.

Step 6: Add Rose Water and mix it well until it forms a paste.

Step 7: After the paste develops a dough-like texture, add ghee to help get the dough out of the pan without it sticking to it. Turn the heat off.

Step 8: Grease the butter paper with ghee and apply some of it on your hands as well.

Step 9: Knead the cashew dough until it is smooth.

Step 10: With the help of a rolling pin, roll the dough out and adjust its thickness as per your preference.

Step 11: Cut the dough into diamond shapes. Coat the pieces with edible silver foil and garnish them with rose petals.

Your Kaju Katlis are ready to serve!

5. Panchamrut
